Portobello Omelette

A grilled portobello mushroom (scrape out the gills first, they tend to be bitter) topped with steamed spinach, one cooked cage-free egg white, a quarter of a small jalapeno pepper seeded & chopped, cilantro chopped, cherry tomatoes chopped, a quarter of a yellow pepper chopped, one grilled slice of yellow onion chopped, a pinch of salt, the juice of a lime, & cold chopped pineapple (ALL ingredients are ORGANIC)
