Broccoli Chiburgers!! Egg-free, dairy-free, nut-free


The coolest, most delicious, most tastiest, most amazing, most awesomest, most convenient little burgers EVER. 

Grilled chicken + steamed broccoli + ghee=
Broccoli Chiburgers!
NO eggs  
NO nut flour  
NO dairy 

Here's what you do.
Cook a hearty whole chicken/breasts/thighs (pasture-raised & free of fake stuff if you can!) with olive oil, sea salt, & pepper. 
Steam a couple heads of broccoli/cauliflower until they've reached the right level of doneness for your gut. 
Toss your pulled chicken meat & steamed veggies into a food processor.
Pulse until the mixture reaches a semi-moist, formable, crumb-like consistency. 
Form your "Broccoli Chiburger" mix into little burgers.
Melt some ghee in a microwavable dish.
Gently brush the melted ghee onto the burgers; you can coat the underside of the burgers after they've browned some in the oven. 
Broil your burgers on a small cookie sheet in the oven on HIGH until they turn brown; flip over to brown the other side. 
Dig into your creation & smile!!
p.s. The burgers are sort of dry so you may want to eat these in conjunction with a bowl of soup or some zucchini pasta.
p.s.s. I initially froze my burgers on a cookie sheet. Once they were good & solid, I transferred them to a glass container with a snap-lid. This way they won't freeze stuck together! ALSO, you may want to stick little pieces of parchment paper in between each burger to really guarantee the burgers don't freeze together & turn into one big mass of burgers. 

Does it get any easier than this? I don't think so. I know it's been a while since I've posted a recipe but hey! Coming up with exotic recipes gets tough when your diet shrinks down to nothing. Trust me when I say I was full of excitement when this recipe turned out to be a winner. :)
