♪ "Getting to know you" ♪

Hi!!!! 

For those of you who don't already know, my name is Alexandra Brown, but you can call me Allie. I'm almost 21.5 years old & I dream of becoming a national/state park ranger. I have an especially irregular body. My digestion is out of whack, my joints are like those of an old lady, I tolerate few foods/beverages, I prefer to stay inside my comfort zone, & my body takes on water like a sponge. Yep, that's me. Does it put a slight damper on my social life? A little bit. Has it made it difficult to succeed in school? Yes. Does it affect my job? Absolutely. Is it all that I am? NO. Is the SCD something I truly believe in? Mhmm. Is it hard? YEAH! Am I human and make mistakes? You bet. Will I quit no matter how many times I fall? NEVER. There is always an opportunity to improve. If I have to fall a billion times first, fine. Let me crash. But you better believe that I'll pick myself right back up & fight hard not to fall. Why? Because I want it. And you've got it want it to get it. Wanting it is half the battle. The rest will come on its own. I'm in a rough place right now but I know I can rise above it. If this resonates with anyone else here on the page, I'm listening. I'm by your side, ready to pick you up when you fall. I won't give up on you. I know you can make it. And for goodness sake, I hope you're having a fabulous weekend. ;)

Broccoli Chiburgers!! Egg-free, dairy-free, nut-free


The coolest, most delicious, most tastiest, most amazing, most awesomest, most convenient little burgers EVER. 

Grilled chicken + steamed broccoli + ghee=
Broccoli Chiburgers!
NO eggs  
NO nut flour  
NO dairy 

Here's what you do.
Cook a hearty whole chicken/breasts/thighs (pasture-raised & free of fake stuff if you can!) with olive oil, sea salt, & pepper. 
Steam a couple heads of broccoli/cauliflower until they've reached the right level of doneness for your gut. 
Toss your pulled chicken meat & steamed veggies into a food processor.
Pulse until the mixture reaches a semi-moist, formable, crumb-like consistency. 
Form your "Broccoli Chiburger" mix into little burgers.
Melt some ghee in a microwavable dish.
Gently brush the melted ghee onto the burgers; you can coat the underside of the burgers after they've browned some in the oven. 
Broil your burgers on a small cookie sheet in the oven on HIGH until they turn brown; flip over to brown the other side. 
Dig into your creation & smile!!
p.s. The burgers are sort of dry so you may want to eat these in conjunction with a bowl of soup or some zucchini pasta.
p.s.s. I initially froze my burgers on a cookie sheet. Once they were good & solid, I transferred them to a glass container with a snap-lid. This way they won't freeze stuck together! ALSO, you may want to stick little pieces of parchment paper in between each burger to really guarantee the burgers don't freeze together & turn into one big mass of burgers. 

Does it get any easier than this? I don't think so. I know it's been a while since I've posted a recipe but hey! Coming up with exotic recipes gets tough when your diet shrinks down to nothing. Trust me when I say I was full of excitement when this recipe turned out to be a winner. :)
