Hi, bloggers & fellow foodies!!!! I'm Allie, a 28 year-old redhead who loves to cook/prepare healthy food. After several diagnoses of Celiac disease, Crohns Disease, fibromyalgia, RSD, & autoimmune thyroiditis (aka CHRONIC LYME!!!!!!!!!), I took my health into my own hands. I put my life (school, to be exact) on hold & devoted all my time to getting better & healing my wounded system. I found myself traveling down every path possible to feel well: raw, cheese & meat, nuts, lots of fruits, no fruits, etc. Nothing seemed to work. I still struggled with severe inflammation (20 lbs. worth at my worst), joint pain, fatigue, exhaustion, & extreme food sensitivity. Following a Celiac diet wasn't enough. I had to dig deeper. SCD is the miracle cure. The Specific Carbohydrate Diet is a strict dietary lifestyle geared toward people with Celiac, Crohn's, IBS, UC, & Autism. It is a sugar-free, lactose-free, grain-free diet. With this blog, I can show you the beauty behind the beast of this strict way of living (only in the beginning!) & introduce you to some delicious meals!!!! :)
